The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. Moreover, hard-anodized pots and pans are safe to use with metal utensils and under the broiler. Riveted on for strength, the stainless-steel Cool V handles stay cool during stovetop cooking and are oven-safe, as are the lids.
Covering all the basics, this set consists of a 2-1/2-quart covered shallow saucepan; 8-, 10-, and 12-inch open skillets; and 3- and 7-quart covered chef's casseroles. The lid on the larger casserole is domed to send moisture and flavors back into the pot for succulent meat dishes. You'll find low to medium heat is the best temperature range for this fast-heating cookware. After use, wash by hand. Though it's still covered by a lifetime warranty, Calphalon discontinued the Commercial Hard-Anodized line in 2004 and replaced it with Calphalon One Infused Anodized. --Ann Bieri

Calphalon Warranty is Bogus - Buyer Beware (Rating: 1 out of 5) I received a set of Calphalon pots several years ago. The outside surface scratches easily and requires a special cleaner. The pots also got worn away by repeated washings and dishwasher use. Though the company claims to have a 10-year warranty, when I returned the pots due to my dissatisfaction, they didn't provide a store credit or a replacement set. In fact, Calphalon just sent them back to me. I strongly recommend against this company and their products - their customer service was atrocious and their product is too difficult to maintain for everyday people's use.
The ONLY way to cook! (Rating: 5 out of 5) No cookware on the market beats classic Caphalon Commercial for overall performance, reliability and maintenance. This was only our second set -- and in fact is more an extension of the first rather than a new one.

I do not like teflon so this works well for our family.
Some people do not know but teflon is very dangerous at high temps. Teflon is very toxic to parrots. If you have birds be very careful when buying cookware.
A great buy (Rating: 5 out of 5) I bought these when they had a great price drop and am very happy with the set. I use every piece all the time. They are heavy duty, the handles stay cool and they cook evenly. Now, if soneone sees a great deal and jumps in be sure to read the info - these are not non-stick. These are commercial hard-anondized. I know it goes without saying, except it does not. I know too many people who simply don't know anything except Teflon so working with this will be new and unexpected. But for the little additional care or cleaning, (actually not care - but yes on cleaning), is quickly made up for in the even and smooth cooking surface. It is also so nice to work inside a pan and not worry about scratching off or burning off the Teflon coating. No coating to lose means these pans on't need to be replaced every two years.
This will sound strange but the best part for me is the, I will call it, low-profile, handle. The skillets and sauce pans have very comfortable handles that slope slightly down that make working on the stove very easy while using multiple pans. I give this very high marks.
Third time buyer-love this cookware!!!!! (Rating: 5 out of 5) Well, I suppose it's about time that I review this line of cookware...after all I just bought a third set plus all the extra pieces I could get! I bought the first set for myself almost 2 yrs ago...it was to replace a set of Farberware hard-anodized cookware that had a "lifetime" guarranty....well, after maybe 7 yrs of use, the coating was wearing off & the pans warped on my smooth cooktop, etc...so back they went. They were replaced with odd pieces, not even the same sizes either.
Oh well.
Talking to a co-worker, I learned how much she loved her Calphalon, so I decided to give it a try, buying just a single piece to start....I was sold!!! Bought myself a full set plus several extra pieces, all at great deals from Amazon.com. I also bought the same set & extras for my oldest daughter, a law student & gourmet cook (don't know when she finds the time). She loves hers too...so easy to care for & you don't have to worry about scratching them with metal utensils....Love the way yo can use a scouring sponge to clean them.
I do have a few pieces that are not part of the commercial line & they have the non-stick coating...also very nice, but I use them for different cooking, like eggs, etc. The commercial line is great for general everyday cooking.
Watch the prices tho, as they really do fluctuate...almost bought my first set at $249...then it dropped too $188....bought the second set within days for $176 & Amazon was gracious enough to credit me back the difference. When I saw the price drop recently to $149 I jumped on it & bought set #3 for our younger daughter.....her Christmas gift is in our basement! Just hope we can keep it hidden til then!!
